Hello, Review from a pastry chef/chocolatier :) : This is the second time I've bought a Russian at the Les Halles shop. Unbeatable value for money (€2.80) given the excellent quality of this one. Of all the Russians I've tasted in Pau, including the famous one from Oloron, where it was invented, this is my favorite. The biscuit and interior are excellent, and the filling is perfectly consistent, meaning it's not too firm like three-quarters of the other pastry shops (not to say they're any worse, that's just my opinion). Kudos to the pastry chefs who make it. However, I'm surprised by the price difference between this pastry and the others you sell nearby, which are almost double (of course, I understand that the production costs are different, as well as the more complex design, which means more labor time...), but I think it would be possible to offer a slightly lower price. I don't have the names of the pastries, sorry. In any case, HATS OFF to you for the beauty of your pastries, even if the prices are a little high for me (personal opinion). You make great pastries. The saleswomen are kind :) I wanted to post a constructive review. Have a nice day and see you soon, no doubt :)

Hard croissant probably from the day before and if you have the misfortune to bring it back, no it’s not possible.

Excellent as usual, everything was perfect. Crispy croissants, perfect wholemeal bread. Brioché King's Crown, a delight. I thank my brother Stephane for recommending the best places in Pau.
