Ossau-Iraty: a traditional cheese
Ossau-Iraty AOP is a sheep's milk cheese inherited from age-old pastoral traditions. Its producers have come together under the AOP sign, Protected Designation of Origin. This is a sign of quality that regulates production, certifies a manufacturing process, and ensures that sheep, breeders, producers, cheese factories and refiners are all located in a well-defined area, the Béarnaise part of which we invite you to discover.
