Its evocative name of grape recalls the pips which are the seeds of the vine, revealing the maturity of the berries and bringing tannin to the wine. Like 4-leaf clovers, grapes with 4 pips are rare, as are some of the wines offered. Discover their secret, their appellation, their terroir, their history and that of the winemaker alongside Jordan, a passionate sommelier. At Les Quatre Pépins, sourcing is done directly and without intermediaries to offer you unique vintages, sometimes in limited quantities, produced by winegrowers who are also harvesters who work in organic farming, biodynamics or natural wine, on vines of less than 30 hectares. Passionate about wine but also about the technology that surrounds it, Jordan obtains the latest equipment to take a glass of wine through the cork without altering it, or to refresh your white in just 4 minutes. The wine list is therefore varied since it is made up of more than 500 references, vintages which can also be served by the bottle with a corkage fee of €10 or €20.

Oenology is not the only delicacy of this atypical place! To accompany a good glass of wine, what could be better than delicious recipes carefully prepared? Every evening, a menu of around ten suggestions is cooked from fresh, local and seasonal products, proposals that change every 2 to 3 weeks depending on the available ingredients and inspirations. Truffle croq, roasted camembert with honey and Béar pepper, soft-boiled eggs and homemade mayonnaise with black garlic or butternut squash velouté topped with a mozzarella espuma from Bufflone du Béarn, there is no shortage of ideas to accompany white, red or rosé wines.
