Founded in 1918, the Bonnemason Farm has been passed down from father to son for several generations. Each member of the family has contributed to perpetuating a mountain agriculture that respects traditions, driven by a passion for the profession of farmer-cheesemaker.
TRADITIONAL BREEDING AND LOCAL BREED
Basque-Béarnaise sheep and Blonde d'Aquitaine cows
The farm relies on a flock of 400 Basque-Béarnaise ewes, an emblematic local breed of the Pyrenees, as well as about fifty Blonde d'Aquitaine cows. The ewes are milked from November 1st to June 30th, graze throughout the winter, and are fed exclusively with fodder from the farm's land.
Farmhouse cheese made with raw milk from the Ossau Valley
A local product with authentic flavors
Using raw sheep's milk, Ferme Bonnemason produces Ossau Valley farmhouse cheese, a true jewel of Béarn's gastronomic heritage. This artisanal cheese reflects the richness of the terroir and respect for traditional methods.
Summer pastures and high-altitude cheese
A living tradition in the heart of the Pyrenees
From July to mid-October, the herd is taken up to summer pastures, first to the Bious site, at the foot of the Pic du Midi d'Ossau, then in the autumn to the Ibech summer pasture, above the village of Bielle. The richness of the high-altitude flora gives the summer cheese unique aromas, highly appreciated by lovers of characterful cheeses.
