Ferme Ossiniri

Transhumance is the very basis of our farm located in the Aspe Valley . It is of course a necessity when you have a farm in the high mountains that is too small to support the sheep and cows all year round.

It is also a lifestyle choice for the whole family, which follows the herd through the seasons. It is therefore an itinerant farm with 4 transhumances on 3 sites: the sheepfold in the valley, in Accous, the intermediate summer pasture at 1100 m and the high summer pasture at 1600 m in Borce. We bring our 400 ewes and 12 cows to the best grass as it grows.

High mountain grass 6 months of the year, dry fodder, alfalfa, grain corn and even flax to get through the bad season, here is our recipe for making a cheese that retains the taste of tomme des Pyrenees. We make 3 types of cheese: pure sheep, cow and mixed cow-sheep.

Come visit our salting room and taste our cheeses on Tuesdays and Fridays (by appointment) at Accous from 3 p.m. to 7 p.m. (summer hours: May 20 to October 20) and the rest of the year by appointment.
