      Located in the small village of Larceveau, in the heart of the Basque Country , the Istara cheese dairy has been cultivating its know-how from the pastoral tradition since 1964. The milk is collected from more than 500 small family farms in the vicinity of the cheese dairy. These shepherds raise their local breed sheep in the pastures of the Pyrenees and thus deliver to us every day a naturally rich and fragrant milk that gives all its flavor to the AOP Ossau-Iraty Istara.

      OSSAU-IRATY AOP ISTARA: All the authenticity of the Basque Country. It benefits from a Protected Designation of Origin. It is made with whole sheep's milk and matured for at least 4 months. Its taste is fruity and its texture melts deliciously in the mouth. To be enjoyed in the Basque style in thin slices accompanied by black cherry jam.

      CHISTOU D'ISTARA: The fruity taste of sheep's milk combined with the sweetness of cow's milk. This is a cheese made from a mixture of cow's and sheep's milk, matured for around 90 days. Its taste is both sweet and distinctive, combining the character of sheep's milk with the more moderate character of cow's milk. Its soft and melting paste of a beautiful ivory colour adds to the pleasure of tasting.

      P'TIT BASQUE D'ISTARA: A unique pure sheep's milk tommette. It is a small pure sheep's milk tommette with a melting paste and a subtly fruity flavor. Its unique, delicately sculpted crust is characteristic of the wicker molds of yesteryear.

    Good morning The crust of the p'tit basque really doesn't taste good! Usually I happily eat all cheese rinds, but this rind which contains artificial products is really not good. Especially as you get older. Are chemicals essential? Cheese in plastic purchased from Netto Argelès gazost. Sincerely
