Since 1950, the Matocq cheese dairy has been committed to maturing its cheeses in accordance with Basque Béarnaise methods. It all began when Jean Matocq built the first ripening rooms on his old Béarnaise farm to mature farmhouse cheeses and sell them at the surrounding markets. The cheese dairy was later taken over by his son Christian in the 1980s.

Today, the Matocq cheese dairy offers a complete range of Pyrenean cheeses made in the upper Béarn region and in the heart of the Basque Country. The cheeses are matured in the cellars of the Matocq cheese dairy located in Asson at the foot of the Col du Soulor, respecting ancestral traditions.

Deeply rooted in its terroir, the Matocq cheese dairy offers a cheese with an exceptional taste, the flagship of the range: Ossau-Iraty. Since 1980, it has been part of the prestigious family of Appellations d'Origine Contrôlées (Controlled Designations of Origin). The specifications that define the rules for milk production, manufacturing, and ripening give this pure sheep's milk cheese specific characteristics...
