    • Since 1950, the Matocq cheese dairy has been committed to maturing its cheeses using traditional Basque-Béarn methods. It all began when Jean Matocq built the first ripening rooms in his old Béarn farmhouse to mature farm cheeses and sell them at local markets. The cheese dairy was later taken over by his son, Christian, in the 1980s.

      Today, the Matocq cheese factory offers a full range of Pyrenean cheeses made in the upper Béarn region and in the heart of the Basque Country. The aging process continues in the Matocq cheese factory 's cellars located in Asson at the foot of the Col du Soulor pass, respecting ancestral traditions.

      The Matocq cheese dairy, deeply rooted in its local region, offers a cheese with an exceptional taste, the flagship of its range: Ossau-Iraty. Since 1980, it has been part of the prestigious Appellation d'Origine Contrôlée (AOC) family. The specifications that define the rules for milk production, cheesemaking, and aging give this pure sheep's milk cheese its specific characteristics...
