    • L'Ossau, a magnificent bourgeois house with preserved traditions in Pau

French gastronomy takes center stage at L'Ossau, a Michelin-starred restaurant where the art of fine dining is celebrated. Open for lunch and dinner Monday through Friday, this establishment, designated a " Maison Bourgeoise" (bourgeois house), offers a timeless experience in a refined setting. Book your table now at 32 rue Tran in the heart of Pau.

L'Ossau, a restaurant in Pau serving refined, bourgeois cuisine

L'Ossau evokes those beautiful 19th-century houses with their impeccable service, where great classics of French cuisine delight the palate, served on elegant tableware. Emphasizing fresh, local, and above all, seasonal produce, Benjamin and Étienne have created a concise menu of renowned recipes, revisited and personalized. Chicken from Maison Biraben, Duroc pork from Lasset farm, organic bread from Gaston's bakery, or cheeses from the Gazibos creamery—each ingredient is carefully selected to offer you a taste of traditional yet creative cuisine. The menu changes monthly according to the seasons, as does the weekly lunch menu, which features tempting offerings that change every three weeks. Some dishes served in the evening offer a delightful spectacle in the dining room, notably the flambéed crêpe Mademoiselle, a delicious treat to savor. Created by pastry chef Jonathan Vallenari, the desserts are true delights to enjoy before coffee.

L'Ossau, a bourgeois establishment renowned for its gastronomy in the city center of Pau

When two friends with a passion for gastronomy meet, the recipe for success is guaranteed! After working together at Thierry Marx's Mandarin Oriental, Benjamin Grandclément and Étienne Guinel discovered shared values and decided to create a place that reflects their personalities : L'Ossau in a bourgeois house. The former is busy in the kitchen while the latter manages the dining room, a close-knit duo who champion the French art of living. Settle into an elegant and refined dining room with warm wood accents, and let yourself be enveloped by the serenity of the place. In the warmer months, a lovely shaded terrace allows you to enjoy sunny days.

The added bonus? Homemade sauces made from juices, stocks and broths, giving you the chance to mop up your plate without feeling guilty.

Première expérience parfaite, cuisine fine et service attentionné. Juste un peu long pour un repas de déjeuner en semaine avec une formule 2 plats.

Regional dishes perfectly prepared. Pleasant service. A good wine list with several top wines by the glass.
