Fromagerie Istara : More than 60 years of commitment in the Basque Country.

Located in the small village of Larceveau, in the heart of the Basque Country , the Istara cheese dairy cultivates its know-how from the pastoral tradition since 1964. The milk is collected from more than 500 small family farms in the vicinity of the cheese dairy. These shepherds raise their local sheep in the pastures of the Pyrenees and deliver to us every day a naturally rich and perfumed milk that gives all its flavour to the Ossau-Iraty Istara AOP.

OSSAU-IRATY AOP ISTARA : All the authenticity of the Basque Country. It has a Protected Designation of Origin. It is made from whole sheep's milk and matured for at least 4 months. Its taste is fruity and its texture melts deliciously in the mouth. To be enjoyed in Basque style in thin strips with black cherry jam. Bronze medal at the Concours Général Agricole 2020

CHISTOU D'ISTARA : The fruity taste of sheep's milk combined with the sweetness of cow's milk. It is a cow/ewe milk cheese, matured for about 90 days. Its taste is both sweet and distinctive, combining the character of sheep's milk with that of cow's milk. Its supple and melting paste of a beautiful ivory colour adds to the pleasure of tasting.

P'TIT BASQUE FROM ISTARA : A unique pure sheep's milk cheese. It is a small pure sheep's cheese cheese with a melting paste and a subtle fruity flavour. Its unique, delicately carved crust is characteristic of wicker moulds of yesteryear. Silver medal at the Concours Général Agricole 2020
